Kakanin Filipino rice-flour sweets and snacks

Ninong’s Cafe in Northridge, CA is a family-owned bake shop offering Filipino-American inspired pastries made in-house from family recipes [1], and Sugar & Grace Bake Shop is another bakery [2], but neither source specifies whether they produce kakanin (such as puto, bibingka, suman, sapin-sapin, kutsinta, or palitaw) in-house or use commercial frozen products. The third source [3] discusses kakanin generally but does not address LA bakeries. No source mentions festivals, Simbang Gabi, or the ceremonial use of these sticky-rice sweets. Additional sources would be needed that specifically address: (1) the production methods (house-made vs. commercial frozen) of kakanin at individual LA-area Filipino bakeries, and (2) the traditional role of kakanin in Filipino festivals and the Simbang Gabi Christmas novena.
