Smothered meat is a foundational soul-food technique distinct from European braising or stewing, defined by a two-stage process: searing the meat in a cast-iron skillet, then cooking it low and slow in a thick, onion-laden pan gravy until fork-tender. The result is a deeply savory dish where the gravy, built from flour, butter or fat, broth, and caramelized onions (sometimes mushrooms), coats the meat rather than submerging it, distinguishing it from French braising (which uses mirepoix and lighter jus), Italian sugo (tomato-based), and Cajun étouffée (which employs a dark roux and typically features shellfish). The technique echoes West African gravy-stew traditions, where layered, deeply flavored onion-and-broth sauces are slow-cooked with meat.

The most common variants are smothered pork chops (bone-in or boneless, often from the shoulder or loin) and smothered chicken (typically bone-in thighs or drumsticks, though breast is used). A smothered steak version exists, usually with cube steak or round steak. All are served over white rice, mashed potatoes, or egg noodles to absorb the gravy. The dish is a Sunday-dinner and weeknight staple across the African American South, with regional variations in onion-to-gravy ratio and spice level (black pepper, paprika, garlic powder, sometimes cayenne).
