Huevos rancheros is distinct from huevos divorciados, which features two eggs each topped with a different salsa (one red, one green) separated by refried beans. Unlike chilaquiles, which uses fried tortilla chips simmered in salsa before adding eggs, huevos rancheros keeps the tortilla whole and crisp-tender. Migas differs by scrambling eggs with fried corn tortilla strips and often includes onions, tomatoes, and chiles.
