Chicken and waffles Roscoe's, Wells, and the LA association

Chicken and waffles is a soul-food classic whose modern form is widely credited to Harlem’s Wells Supper Club in the 1930s, while Los Angeles’s Roscoe’s House of Chicken & Waffles (founded 1976) transformed the dish into a defining emblem of LA Black food culture. The combination’s origin is contested: some trace it to Pennsylvania Dutch cuisine in the 1600s, where fried chicken and waffles appeared as separate breakfast items, but the deliberate pairing of crispy fried chicken with a sweet, yeasted waffle, served as a single plate, emerged in Black culinary tradition during the Jazz Age.

The Wells Supper Club origin story holds that late-night Harlem jazz musicians, finishing sets after midnight, wanted both breakfast (waffles) and dinner (fried chicken) in one meal. This “breakfast-for-dinner” logic carried directly to Los Angeles, where Roscoe’s founder Herb Hudson, a Harlem native who had worked at Wells, opened his first location on Pico Boulevard in 1976, replicating the late-night soul-food model for LA’s own jazz and R&B scene.

Roscoe’s menu is built around combination plates: the “Scoe’s Special” (two waffles, two chicken pieces), the “Carol C” (one waffle, one breast, one wing), and the “Country Boy” (one waffle, two thighs). The defining seasoning includes cayenne-infused syrup, hot sauce, and butter, distinguishing it from Belgian waffles (which are yeast-risen and deeper-pocketed) and from sweet brunch waffles (typically topped with fruit or whipped cream). Roscoe’s waffle is a crisp, buttermilk-based grid waffle, designed to absorb both butter and syrup while holding up to the savory crunch of pressure-fried chicken.

The three core Roscoe’s locations, Long Beach, Hollywood, and the original Pico-Crenshaw, are pilgrimage sites for Black food culture and broader LA brunch culture. The Pico location, in particular, sits at the historic heart of LA’s Black business corridor, where late-night soul food culture (shared by Harold & Belle’s, Honey’s Kettle, Dulan’s, Stevie’s, and Maverick’s Flat) anchors the community. Roscoe’s has been name-checked in hip-hop lyrics, film scenes, and celebrity visits, cementing its status as a cultural landmark.
