Machaca Northern Mexican shredded dried beef

Machaca is a traditional dried-and-shredded beef preparation originating in the arid northern Mexican states of Sonora, Chihuahua, Coahuila, and Nuevo León. Its development predates refrigeration, serving as a method to preserve beef in the region’s dry climate through salting and sun-drying.

The process begins with lean cuts of beef, typically top round or brisket, which are salted, then air-dried or sun-dried for several days until the moisture content is drastically reduced. The dried meat is then rehydrated by simmering in water or broth, and subsequently shredded into fine, fibrous strands. This technique yields a shelf-stable protein that can be stored for months without spoilage.

Machaca is most commonly prepared machaca con huevos, scrambled with eggs, onion, tomato, and chile, a staple breakfast dish across northern Mexico. It also appears as a filling for burritos, tacos, and sincronizadas (quesadilla-like tortilla sandwiches). In Sonora specifically, machaca is traditionally paired with flour tortillas, reflecting the region’s wheat-growing heritage and preference for flour over corn tortillas. The dish is often served with refried beans, salsa, and frijoles charros.

Regional variants exist: in Chihuahua, machaca may be prepared with chile colorado sauce; in Coahuila, it sometimes incorporates nopal (cactus paddles). Machaca is distinct from Yucatecan salbut (a puffed tortilla topped with shredded turkey or pork) and cochinita pibil (achiote-marinated slow-roasted pork), which belong to the Yucatán Peninsula’s Maya-influenced culinary tradition.

Dietary notes: Machaca is naturally gluten-free and high in protein. It is not vegan or vegetarian. For halal or kosher preparation, the beef must be sourced from appropriately slaughtered animals. The dish contains no dairy in its basic form, though machaca con huevos includes eggs. The drying process does not involve any common allergens beyond beef itself.
