Pulque fermented agave sap (canonical pre-Hispanic beverage)

Pulque is a traditional Mexican fermented beverage made from the sap of select agave species, primarily Agave salmiana (the “maguey pulquero”), as well as A. atrovirens and A. mapisaga distinct from the blue agave (A. tequilana) used for tequila. Production begins when a mature maguey plant, aged 7–12 years, has its heart cored to create a cavity that collects aguamiel (honey water), the sweet sap. This sap is then fermented naturally for approximately 24 hours by native Lactobacillus bacteria and Zymomonas mobilis, yielding a beverage of 4–8% ABV with a cloudy white-yellow color, thick viscous texture, and a sour-tangy, slightly fizzy character. Unlike tequila or mezcal, pulque is not distilled.

Originating on the central Mexican plateau, pulque held sacred status in pre-Hispanic Mesoamerica, associated with the goddess Mayahuel and used in ritual contexts. After the Spanish conquest, pulque production continued, and by the 19th and early 20th centuries, pulquerías became iconic urban institutions in Mexico City and surrounding states (Hidalgo, Tlaxcala, Puebla). The beverage experienced a steep decline in the 20th century, largely due to competition from the Mexican beer industry particularly Cervecería Cuauhtémoc and Grupo Modelo which aggressively marketed beer and marginalized pulque as a “backward” drink.

An early-21st-century revival has emerged, with urban craft pulquerías in Mexico City offering both traditional pulque and flavored versions called curados, made with fruits, seeds, or other ingredients. Pulque is distinct from tepache (fermented pineapple), balché (Mayan honey-bark fermentation), and tejuino (fermented corn). In Los Angeles, pulque is occasionally available at agave-focused bars such as Broken Spanish, Antigua, and Mama Por Dios, though imports face challenges due to its short shelf-life. Pulque is vegan and contains alcohol.
